Skinny Mini Red Velvet Cupcakes
Yield: 36 Mini Cupcakes
1 1/4 cups flour
1/2 tablespoon cocoa
1/s teaspoon salt
1/2 teaspoon baking powder
1/2 cup sugar
1/4 cup Greek yogurt
2 tablespoons butter
1 teaspoon vanilla
1/2 teaspoon baking soda
1/2 teaspoon white vinegar
2/3 cup skim or 1% milk
4 oz. low-fat cream cheese
1/2 cup powdered sugar
1/2 teaspoon vanilla extract
Preheat oven to 350° & line mini cupcake pan with liners.
In a medium bowl, whisk together flour, cocoa, salt & baking powder.
Using a stand or hand mixer, cream together sugar, yogurt & butter. Add egg & vanilla. Beat until combined.
Add 1/2 of dry ingredients to creamed mixture. Pour in 1/3 cup milk. Mix well. Add remaining dry ingredients and milk. Mix well.
In a small bowl, mix together baking soda & vinegar. Gently fold into cupcake batter.
Fill cupcake liners 2/3 full and bake for 10 minutes. Remove from pan & cool on rack.
Using a stand or hand mixer, beat cream cheese until smooth.
Add powdered sugar & vanilla. Mix well.
Frost cooled cupcakes & enjoy!
